Slow fermentation and deliberate resting build aroma, lift and a crisp, delicate structure. Time is not a pause in the process; it is one of the ingredients.
Whole vanilla, seasonal citrus, couverture chocolate, pistachio and fig are selected for flavour first. Each is handled differently — zest, infusion, roasting or temperature — to preserve what makes it distinctive.
