Our Ingredients
Great pastry begins with what goes into it.
At Maison Tuileries, ingredients are chosen for flavour, structure and how they behave in the finished pastry. Whole vanilla, seasonal fruit, couverture chocolate, butter and flour are selected to create French pâtisserie, entremets, macarons and viennoiserie with clear flavour, balanced sweetness and refined texture.

Whole Vanilla Beans
Aromatic depth, never excess.
Visible seeds, held sweetness, long finish. Vanilla structures creams, ganaches and chantilly without ever masking the fruit.
Pairs with: milk chocolate, citrus, dried fruit.

Seasonal Citrus
The light of Makkah, straight to the bowl.
Lemon, orange and grapefruit are selected for aroma as much as acidity. Zest, juice and bitterness are balanced carefully so citrus can lift a cream, compote or glaze without becoming sharp.
Pairs with: vanilla, raspberry, dark chocolate.

Couverture Chocolate
Depth, balance, a clean finish.
Our couverture chocolate is chosen for character and balance: enough cocoa depth to be distinctive, with a smooth melt and sweetness kept in check. It forms the backbone of ganaches, mousses, glazes and chocolate pieces.
Pairs with: citrus, praline, coffee.

Butter & Flour
The foundation of every fold.
Flour gives structure; butter gives flavour, lift and delicacy. Temperature, salt and resting time are controlled closely so viennoiserie bakes with crisp layers outside and a tender centre.
Pairs with: seasonal fruit, praline, fresh herbs.
Depth and balance, in every melt.
From ganache and mousse to glaze and bonbons, our chocolate work is built around balance. Cocoa remains expressive, textures stay smooth, and sweetness never becomes the main flavour.
